Today we had a playdate after school. I haven't mastered the camera yet.. all of my indoor shots of kids come out blurry. It would be helpful if they would sit still for a second. ;o) Need to practice or get out the manual!

Today was just a catch up day... just got the house back in order after having the kids and John home for vacation. The house was completely trashed, so it took most of the day. I didn't even leave the house except to get the kids to and from the bus stop.

I did, however, manage to completely screw up a Boston Cream Pie and make some really good mini spinach quiches. First the Boston Cream Pie...

Isn't she a beauty?!?!? LOL! I make the fake kind, the one with vanilla pudding in the middle, to which I added about 1/3 cup of homemade vanilla extract (read: practically vanilla-flavored, 80 proof Smirnoff Vodka). I think I got a buzz just licking the bowl after putting it on the cake. Then I realized I didn't have the energy to make the fudge sauce, so I got out a can of vanilla frosting and added way too much cocoa powder to make it chocolate. I'd like to blame the beautiful cake pedestal I got for Christmas (this is my second screw up and second cake I made and put on it), but really... what was I thinking? I can't even give it to the kids... they would get drunk!

Dinner was good though. Even the kids liked the quiche. That is saying A LOT. These kids are picky little boogers.



Here's the recipe if you want to try it:

Spinach Quiche (makes 4 ramekins and 1 8-inch crustless pie)

Ingredients
* 1/2 cup butter
* 3 cloves garlic, chopped
* 1 small onion, chopped
* 1 package fresh spinach
* 1 package fresh mushrooms
* 3 slices provolone cheese
* 1 (8 ounce) package shredded Cheddar cheese
* salt and pepper to taste
* 1 package biscuit dough
* 5 eggs, beaten
* dash nutmeg
* 1 cup milk (scant cup... don't use it all)


Directions

1. Preheat oven to 375 degrees F (190 degrees C) and butter 4 ramekins and glass pie dish. Flatten 2 biscuits into each ramekin and form crust. Sprinkle crsuhed crackers into pie dish if desired. Bake ramekins with biscuit crust for 6-7 minutes. Remove and set aside.
2. In a medium skillet, melt butter over medium heat. Saute garlic and onion in butter until lightly browned, about 7 minutes. Stir in spinach and mushrooms. Season with salt and pepper.
3. In a medium bowl, whisk together eggs and milk. Add dash of nutmeg. Season with salt and pepper. Add cheeses. Pour into spinach mixture. Fill ramekins and pie dish.
4. Bake 25 to 30 minutes, until set in center. Allow to stand 10 minutes before serving.

Is it summer yet??? We woke up to more snow (shocker, I know) so John had to go out and plow it so we could get to church. I think we had about 8 inches this weekend in all. That's a lot to someone who isn't from Maine. In Atlanta, there would be wiped out grocery store shelves with no bread, water, milk or batteries for hundreds of miles around. At least there, it all melts within a day or two. I can handle it in small amounts. Maybe.



The kids played Wii (thanks Mom & Dad!) after church and whined a lot all afternoon. Tomorrow is their first day back to school after being out for almost 2 weeks. I'm soooooo ready and so are they!

This is our little goofball Mylie Lou. She's only 9 months old and such a kid... always running around, jumping off the porch stairs, just being a big goober. She's also reached her, uh... maturity a little early so we had to go out and get her some doggie diapers. Fun times!



For dinner tonight I made Beef Stew with Mushrooms. I don't know what it is about the recipes I get from Pioneer Woman's blog. This is my third attempt and they all have been just so-so - maybe a B minus this time. It must be me... she has tons of people who love these recipes. I guess I just don't follow directions very well (quiet, all of you who know me). If I ever make this stew again, I won't be using thyme. I figured out today that I don't care for thyme *at all*. Wish I knew that before I added 5 times the amount the recipe called for. ;o)

The kids schedules are all messed up from staying up late this vacation. I thought AJ was being awfully quiet. I found him with Mylie. LOL!

We all stayed up last night until midnight! The kids were waiting and waiting to see the ball drop and when it actually happened, they thought they missed it. Guess they were expecting something a little more exciting. Ha! So, needless to say, we were all still in our pajamas at 2pm today, relaxing and watching movies. It's really cold and snowy... perfect day to stay in. I took down the Christmas decorations and we played the new Wii. Very low key, snuggly day!

It seems so strange and futuristic to hear 2010, doesn't it? This year, I've decided to do a project. Every day I will post a photo or two and write a little about what we did, who we saw and what is going on in our little world in Maine. It seems like the years keep going by faster and faster and I forget more than I remember. Hopefully documenting the important things will slow it down just a little bit. ;o)

I may post some random recipes here and there too. I like to try new things and am trying to work on my cooking skills. If I come across something that's good, I'll put it here.
